For a slice of Italy at home: homemade walnut biscotti.

If you like cookies, you will fall in love with these crunchy walnut biscotti. We will show you how to bake the Italian specialty yourself.

Ingredients for about 20 pieces:

  • 180 g fine sugar
  • 80 ml soy milk
  • 2 tablespoons coconut oil (melted)
  • 1 organic lemon
  • 1 teaspoon of vanilla extract
  • 255 grams of flour
  • 2 tablespoons cocoa (unsweetened)
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 70 grams of walnuts
  • 40 grams of raisins

Preparation time:

  • 20 minutes (plus 45 minutes baking and 15 minutes resting time)

And it’s done like this:


  1. First mix sugar, soy milk and coconut oil. Wash the lemon well, dry it and then grate the peel and add it. Beat in the vanilla extract as well.
  2. Separately, mix the flour, cocoa powder, baking powder and salt. Then pour the dry ingredients into the first bowl and mix everything to form a smooth dough.
  3. Chop the walnuts and raisins and mix with the egg as well.
  4. Preheat the oven to 160 degrees fan. Divide the dough and form the two halves into loaves, like a long bun. Bake the loaves for 30 minutes on a baking sheet lined with parchment paper. Then let it cool for 10-15 minutes.
  5. Lower the oven temperature to 120 degrees. Using a sharp knife, carefully cut the bread into biscotti, i.e. slices. Place back on the baking sheet and bake for another 5 minutes. Now turn it over and bake for another 10 minutes. Remove the tray, let the biscotti cool completely and store in a cookie jar.
