This is an easy, healthy and delicious vegan pizza soup recipe

Basic ingredients for low-carb pizza soup:

  • 1 medium yellow onion, finely chopped
  • 250 ml tomato sauce
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 2 tablespoons of minced garlic
  • 1 tablespoon of tomato paste
  • 1 tablespoon gluten-free flour
  • 500 ml vegetable stock
  • 350 ml of water
  • 2 tablespoons of distilled white vinegar
  • ½ teaspoon pure maple syrup
  • 50 g + 1 tablespoon nutritional yeast (+/-)
  • a little dust

Other ingredients for the pizza soup recipe :

  • 1 can (450g) cannellini beans, drained and rinsed (divided)
  • 100g sliced ​​mushrooms, drained (optional)
  • 60 g black olives, sliced ​​(optional)
  • 50 to 75 g pasta shells (or pasta of your choice)

Ingredients for the cream sauce:

  • 120 g cup of cannellini beans
  • 60 ml unsweetened vegetable milk
  • 120 ml of water

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons of chopped dry onion
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • A pinch of dried and crushed fennel seeds (optional)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon dried parsley
  • ½ to 1 teaspoon sea salt (+/-) *
  • 1/8 to ¼ teaspoon black pepper (+/-)
  • Crushed ¼ teaspoon red pepper flakes (optional)

Pizza soup recipe instructions

The creamy pizza dough soup is enough to serve as a main course

  1. Fill a large soup pot with water. Add some sea salt to the water. Bring the water to a boil and add the pasta. Stir occasionally to prevent them from sticking. Check package directions for cooking times and/or cook pasta until al dente, drain, rinse with cold water to remove excess starch, shake well and set aside.
  2. Place the spice/herb ingredients in a small bowl, mix well and set aside.
  3. Place the diced onions and bell peppers in a large ceramic/enamelled casserole or similar pot. Sauté the vegetables over medium-high heat until they begin to soften, about 9 to 10 minutes, stirring occasionally to prevent burning. Add a tablespoon of water if the vegetables start to stick and/or burn.
  4. Add the chopped garlic, tomato paste and flour and sauté for 1 minute. Then add all the rest of the base ingredients (except the baking powder) and the spice and herb mixture and mix well. Bring the soup to a boil, then simmer over low heat, add the baking powder and stir.
  5. Add all the remaining ingredients (except the cooked noodles) and let the soup simmer for 10 minutes, stirring occasionally.

How to make vegan cream sauce

  1. Meanwhile, prepare the cream sauce by placing all the ingredients in a high speed blender and blending on high speed until the sauce is smooth and emulsified, then pour the stock into the bowl and mix well. Let the soup simmer for another 5 minutes or until the vegetables have reached the desired tenderness, then add the cooked noodles. Mix well and let the soup heat up. Then remove from the heat and leave for 5 minutes to allow the flavors to combine.
  2. Serve sprinkled with freshly chopped parsley and/or vegan Parmesan cheese.

advice: If you prefer a vegetarian pizza soup, replace the animal or mozzarella with vegan parmesan and the cream or milk of your choice for the plant-based milk.

  • 1 clove of garlic
  • 1 tablespoon pizza topping
