Greece inspires not only with its beautiful and transparent sea, but also with its delicious food. This includes stuffed aubergines, which are a classic of Greek cuisine. We’ll show you how to cook them and take a bit of Greece home with you.
Preparation:
1. Preheat the oven to 190°C on top/bottom heat. Line a baking sheet with parchment paper.
2. Cut the aubergines lengthwise and brush with olive oil. Bake in the oven for 30 minutes. Then let it cool.
3. to fulfill: Empty the aubergines with a spoon and finely cut the insides. Peel and chop the onion and garlic.
4. Heat a little olive oil in a pan. Stew onion and garlic in it. Then add the eggplant cubes, oregano and cinnamon. Add the minced meat and crumble it into the pan.
5. Add the tomato and olives to the pan. Cook for 5 minutes. Then season with salt and pepper.
6. Stuff the aubergines with minced meat and sprinkle with feta. Bake in the oven for 10 minutes.
7. For the tzatziki: Mix all the ingredients in a blender. Then spread over the stuffed aubergines.
