When it comes to breakfast foods, it’s pancakes! Switch up your usual breakfast routine with delicious apple pancakes. They are very versatile and easy to make. Kids love them and you can often make them at home. Apple pancakes are perfect for a fun start to the weekend, or even a quick afternoon snack when you’re craving a snack.
Delicious pancakes with apple spice
There’s nothing like a fresh pancake on a Sunday morning and this might just be your favorite. Served with a sweet cinnamon apple compote, we don’t even need maple syrup. But maybe we’ll add some anyway.

Ingredients:
- 160 g all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons ground cinnamon
- 1 tablespoon of granulated sugar
- 1/2 teaspoon of salt
- 4 tablespoons butter, plus more for cooking
- 1 large egg
- 1 teaspoon of pure vanilla extract
- 300 ml of milk
- 4 large apples, peeled, cored and finely chopped (about 5-6 cups)
- 100 grams of brown sugar
Preparation:
- Mix the flour, baking powder, 1 teaspoon cinnamon, sugar, and salt in a medium bowl. Melt 2 tablespoons of butter and in a large bowl, whisk together the egg yolks, vanilla, milk and melted butter. Gently fold dry ingredients into wet ingredients until combined, then fold in 1 1/2 cups chopped apples.
- In another medium bowl, using a hand mixer, beat the egg whites until stiff peaks form. Using a rubber spatula, gently fold the egg whites into the batter until combined.
- Prepare the Apple Topping: In a small saucepan, melt the remaining 2 tablespoons butter over medium-high heat. Add remaining apples, brown sugar, remaining 1/2 teaspoon cinnamon, and 1/4 cup water. Cook for 10 to 15 minutes, stirring occasionally, until the apples are tender and the mixture resembles jam.
- Melt 1 tablespoon butter in a large skillet over medium-high heat and pour in 1/4 cup pancake batter. When small bubbles appear, after 1 or 2 minutes, flip the pancake and continue cooking until both sides are slightly golden. Repeat with the rest of the batter, adding more butter to the pan if needed. Top the pancakes with the apple mixture.
An easy recipe for cheese and apple pancakes
If you’ve never made pancakes before, fear not! It is very easy to make and the results are very delicious. Here’s what you can also expect from this recipe:

Ingredients:
- 500 g low-fat quark
- 2 apples
- 150 grams of flour
- 1/2 lemon, squeeze
- 3 eggs, size M
- 1 packet of vanilla sugar
- 1 teaspoon baking powder
- 30 grams of sugar
- 1 pinch of salt
- 1 pinch of cinnamon powder
- oil for the pan
Preparation:
- Grate the apples with the skin, then the lemon juice so they don’t mix.
- Mix low-fat quark with eggs, sugar and vanilla sugar. Mix the flour, cinnamon, salt and baking powder so that the dry ingredients can be better distributed in the mass. Stir the flour mixture into the quark mixture and fold in the grated apples.
- Heat the oil in a covered pan at medium temperature and fry the apple pancakes in batches. If you like, you can dust the pancakes with powdered sugar before serving.
Vegan Apple Cinnamon Pancakes
Vegan Apple Cinnamon Pancakes are a great weekend breakfast option.

Ingredients:
- 120 g spelled flour
- 1 tablespoon of baking powder
- 1 1/2 tablespoons of sugar
- 1/3 teaspoon cinnamon
- 1/4 teaspoon salt
- 240 ml non-dairy milk
- 1 tablespoon melted vegan butter for the spread and more for the pan
- 40 g unsweetened apple puree
- 1/2 teaspoon vanilla extract
Preparation:
- Place the dry ingredients in a bowl and stir with a fork.
- Add the wet ingredients and stir. Let the dough rest for a few minutes until it starts to rise.
- Meanwhile, heat a skillet and spread 1 tablespoon buttercream over medium-high heat. The secret to good pancakes (not just this one) is to get the pan nice and hot before spooning in the egg. When the butter is melted and the pan is ready, add a teaspoon of egg and lower the heat a little to medium. When the edges of the pancake look set and a few small bubbles appear, flip the pancake over.
- When this is done, take it out of the pan and spread more butter for the next round as needed.
Baked apple pancakes for the whole family
What could be better than enjoying a big puffy apple and an apple pancake with fresh baked apples and a generous dusting of powdered sugar and a drizzle of maple syrup?

Ingredients:
- 4 eggs
- 65 g all-purpose flour
- 1 tablespoon of sugar
- 1/2 teaspoon baking powder
- 1 pinch of salt
- 240 ml of milk
- 1 teaspoon of vanilla extract
- 2 tablespoons butter, melted
- 1 tablespoon ground nutmeg
- 55 grams of butter
- 100 grams of sugar
- 1/2 teaspoon cinnamon
- 1 apple, peeled, cored and sliced
Preparation:
- Mix eggs, flour, 1 tablespoon sugar, baking powder, and salt in a large bowl. Gradually add the milk, stirring constantly. Add vanilla, melted butter and 1/2 teaspoon nutmeg. Leave the dough for 30 minutes or overnight.
- Heat the oven to 220°C.
- In a baking pan, melt the butter, brushing the sides of the pan. Mix 50g of sugar, cinnamon and 1/2 teaspoon of nutmeg in a small bowl.
- Pour the sugar mixture over the butter. Fill the pan with the apple slices and sprinkle the remaining 50 g of sugar over the apple. Place the pan over medium-high heat until small bubbles appear in the mixture. Then carefully pour the dough mixture over the apple.
- Bake in the preheated oven for 15 minutes. Lower the heat to 190°C and bake for another 10 minutes.
