Cut the pumpkin into slices, remove the seeds and place in the oven lined with baking paper. Cut the ginger into large pieces, quarter the onion. Spread both together with the thyme sprigs on the baking sheet. Drizzle everything with olive oil and season with salt and pepper. Cook in the oven for 25 minutes at 180 degrees (top/bottom heat).
Meanwhile, roast the sunflower seeds in a pan, let them cool and finely chop them. Mix with sesame and black cumin. Cut the tofu into small pieces and cover with the sunflower-sesame mixture.
Once the squash is cooked, place the breaded tofu pieces in the oven for a few minutes. Then pour the marinade over the tofu and squash and serve.

Finely slice the chile and roughly chop the basil. Put the soy sauce, vegetable stock and rice vinegar in a bowl, add the chilli flakes and basil. Mix everything well and let it soak.
