Mix the starch with about one-sixth of the milk in a large enough bowl. Separate the eggs and beat the yolks. Use the egg white for other desserts or cakes.
Remove the vanilla bean. Put the rest of the milk in a saucepan with the vanilla pulp and pods, sugar and salt and bring to a boil. Take some of the hot liquid and add it to the milk and yolk mixture. Mix everything well. Add the milk and egg yolk mixture to the boiling liquid. Stir constantly – even at the bottom of the pot – and let it simmer for about 1 minute.
Pour the mixture through a sieve into a bowl, then cover and leave to cool. Tip: Place the film directly on top of the milk mixture. Then the skin cannot be formed.
Whip the cream. Mix the milk with a mixer until smooth and carefully fold in the cream. Flavored with rhon. Cut the cobertura into pieces and finally add the cream.
