Ingredients for the pasta dough:
Place the flour or durum wheat semolina in a bowl with the eggs, salt and olive oil and knead into a smooth dough using a food processor or by hand. Roll the dough into a ball and wrap it in sticky paper. Let rest for 30 minutes. Then divide it and press it a little.
Using a pasta machine, gradually roll out the dough into thin sheets of dough up to 2 settings. Alternatively, roll with a rolling pin. Place the sheets of dough on a floured surface and cut them into pieces of about 2-3 cm (Austrian: Fleckerl). Heat salted water and cook the dough pieces for 2-3 minutes. Remove from water and set aside. Place the balls in a bowl and mix with a little olive oil to prevent them from sticking together.
Ingredients for the herb:
Peel the onion and garlic and cut into thin strips. Slice the cabbage, remove the stem and cut into strips.
Heat the olive oil in a wide saucepan and sauté the minced meat, add the garlic and onion. Add the cabbage and saute a bit. Stir in the tomato paste and fry briefly. Pour the cream and add the cumin and tarragon. Season everything with salt, pepper and sugar. Let the minced meat and cabbage mixture simmer for about 4-5 minutes, until creamy. Slowly stir in the pasta pieces and heat through the mixture.
Place the Krautfleckerl on a plate and garnish with herbs to taste.
