Recipe “Baked Plum Poor Knights” | NDR.de – Guide

Ingredients for Poor Knights:

Whisk together the milk, cream and eggs to create a sauce. Dip the bread or pastry slice (such as mares, brioche or yeast braid) in it for 2 minutes. Turn the slices once so that both sides are soaked.

Line a large plate with kitchen paper. Melt the oil or butter in a pan and fry the soaked bread slices on medium heat for 2 minutes on both sides until golden brown. Place on kitchen paper to absorb excess grease.

Place the cinnamon and sugar in a deep dish and mix. Put the bread slices in it while it’s still warm. Serve with baked plums or other fruit dishes and eat while still warm. If desired, serve with vanilla ice cream.

Ingredients for plums:

Wash, halve and stone the plums.

Preheat the oven to 190 degrees fan. Line a baking sheet with parchment paper. Remove the vanilla bean. Mix the plums well in a bowl with the olive oil, sugar, star anise, cinnamon, gingerbread spice, vanilla bean and pod. Place on a baking sheet and bake for 6-7 minutes. Then the plums are soft, but at the same time keep their shape. If you extend the time in the oven by 2-3 minutes, the fruit will already dissolve into a plum jam.

A note:

If the poor knights are to be served as a main dish, the indicated quantity is enough for 4 people.
