Sometimes you get a craving for a good cheesecake. However, a whole cheesecake can be a real hit. By the end of the food coma, some would have thought: never again cheesecake! But does it have to be so drastic? No! Our Raspberry Cheesecake is a light version of the popular Cheesecake in a Glass. It’s not as delicious as the original, but it’s no different in terms of taste.
Raspberry cheesecake in a glass is the perfect dessert because it requires minimal effort but the result is quite impressive. Ultimately, a fruity raspberry puree and cream cheese cake with a hint of lemon. Of course, the crispy biscuit base will not be missing: the heavenly dessert is ready, and no one can say no to it.
By the way: Did you know that you can easily make cream cheese at home? All you need are two ingredients – which most of us probably already have at home – and you can save yourself a trip to the supermarket. If you are really adventurous, you can refine it there, for example with a touch of ginger or vanilla.

Raspberry cheesecake in a glass: a dessert dream
Our Raspberry Cheesecake combines the sweetest dessert dreams: fruity raspberry puree, sweet cheesecake and a crunchy biscuit base.
Place cookies in a resealable bag and crush with a rolling pin. Wash and drain the raspberries. In a saucepan over medium heat, cook the raspberries, sugar and lemon juice until the whole mixture thickens slightly. Stir constantly and mash the raspberries a little. Then let it cool.
In a bowl, using a mixer, beat the cream cheese until smooth. Add sugar and lemon zest and mix well. leave aside
In a separate bowl, whip the cream until stiff. Fold the cream into the cream cheese and place the cream in a piping bag.
Place the biscuit crumbs in the bottom of the glass and press lightly. Now put a layer of cream cheese on top. Then top with raspberry puree and finish with cream cheese. Refrigerate for at least 4 hours. Sprinkle with fresh berries and powdered sugar before serving.
