Our Raspberry Cheesecake combines the sweetest dessert dreams: fruity raspberry puree, sweet cheesecake and a crunchy biscuit base.

the preparation

  1. Place cookies in a resealable bag and crush with a rolling pin. Wash and drain the raspberries. In a saucepan over medium heat, cook the raspberries, sugar and lemon juice until the whole mixture thickens slightly. Stir constantly and mash the raspberries a little. Then let it cool.

  2. In a bowl, using a mixer, beat the cream cheese until smooth. Add sugar and lemon zest and mix well. leave aside

  3. In a separate bowl, whip the cream until stiff. Fold the cream into the cream cheese and place the cream in a piping bag.

  4. Place the biscuit crumbs in the bottom of the glass and press lightly. Now put a layer of cream cheese on top. Then top with raspberry puree and finish with cream cheese. Refrigerate for at least 4 hours. Sprinkle with fresh berries and powdered sugar before serving.
