  • 4 eggs
  • 280 g of white chocolate
  • Two unwaxed lemons (juice and peel)

  1. Preheat the oven to 160 degrees and line a suitable form (18 x 18 cm) with baking paper.
  2. Then separate the egg white and yolk. Use a mixing bowl for the egg whites.
  3. Melt the chocolate in a larger bowl. You can do this in a bath or in the microwave (using a microwave safe bowl). After the chocolate is completely melted, it should be cooled briefly until it is liquid, but not too hot.
  4. Now add the egg yolk to the chocolate and carefully mix the two ingredients into a sweet mass.
  5. Next, use a whisk to beat the egg whites until stiff and fluffy.
  6. Add this in thirds to the chocolate egg mixture. Use a spatula or spoon for this. Repeat the process until the egg whites are fully folded and you see no residue. The dough should be light and smooth.
  7. Squeeze a lemon (depending on its size, one is enough to make juice) and carefully add 60 ml of liquid and grated.
  8. The dough is now placed on the prepared tray and baked for about 40 minutes. The top of the lemon cake should be lightly browned. It also develops a thin, slightly hardened layer.
    It’s best to do the toothpick test: if the dough doesn’t stick when you insert the wood, the cake is done.
  9. Allow your dessert to cool completely before removing from the pan. For best results, leave overnight at room temperature and eat the next day. The cake can be eaten in advance, but the texture improves when it is completely chilled.

Tip: The flavor of the lemon cakes is quite intense due to the white chocolate, so serve small pieces to enjoy with tea or coffee.
