Ready in 30 minutes Quick lemon cream in a jar – delicious with cookies

Ingredients for 4 servings:
3 sheets of white gelatin
4 egg yolks
60 grams of sugar
80 ml lemon juice, fresh
200 ml of whipped cream
150 g butter biscuits
Optional: organic lemon and mint for garnish
And it’s done like this:
First, soak the gelatin in cold water. Place the egg yolks with the sugar and lemon juice over a water bath and whisk vigorously until you get a nice, creamy consistency.
Squeeze the gelatin well and mix it into the mixture. Let everything cool.
Whip the cold cream until stiff, then fold in the chilled egg and lemon cream.
Place the butter biscuits in a freezer bag, seal and crush the biscuits into fine crumbs with a rolling pin or rolling pin.
Place four dessert bowls and pour a dollop of cream into each. Sprinkle the biscuit crumbs on top, then put another layer of cream. Now again the crumbs, finally the cream. If you like, you can garnish the dessert with lemon and mint leaves. Refrigerate the dessert until ready to serve.
