“Granola with coconut yogurt and fresh berries” recipe | NDR.de – Guide

Ingredients (about 800 g):

  • 300 grams of oats

  • 300 g almonds, cashews and pumpkin seeds

  • 100 g of sesame and flax seed

  • 100 g sunflower seeds

  • 100 ml maple syrup

  • 2.5 tablespoons of olive oil

  • otherwise: neutral oil

  • coconut yogurt

  • some vanilla beans

  • fresh fruits

  • fresh basil

You can vary the choice and quantity of nuts, kernels or seeds to your liking. The mix depends on one’s taste and wallet. The base is oats. They should make up at least a third of the mass, and they are cheap. In addition to the recommended ingredients, walnuts, hazelnuts or coconut chips are also suitable for making granola. It is best to make the granola in advance. It keeps in jars for several weeks and is very popular in muesli, as a dessert or on its own as a crunchy snack.

The preparation is easy: heat the oven to 160 degrees. Place the oats, nuts, seeds and grains in a bowl and mix with the maple syrup and oil. Maple syrup also depends on personal taste. Place the parchment paper on a baking tray and spread the mixture evenly over it. Bake in the oven for 20-30 minutes until golden brown and crispy. Turn the mixture at least once in between. Keep an eye on the oven, as the granola can quickly become too dark and bitter.

Remove the baking sheet from the oven and let the mixture cool. Mix carefully. The granola should not be lumpy, there can be larger pieces in between.

We recommend granola as muesli for breakfast or as a powerful snack in between. Mix the coconut yogurt with the maple syrup and vanilla essence. Wash, wash and dry the berries. Place some coconut yogurt in a shallow bowl and top with 1 serving of granola. Scatter the berries on top. Garnish with basil leaves. Small leaf basil (shrub basil) works best.
