Pumpkin stuffed with minced meat is the perfect autumn dish. You can present it to your guests as an original appetizer, because it not only tastes good, but also looks good. Or you can enjoy it as a delicious main course with rice, salad or bread.

Ingredients: You need this to prepare stuffed pumpkin with minced meat

  • 1 large Hokkaido pumpkin (about 1.5 kg)
  • 400 g minced meat (preferably half and half)
  • 1 leek
  • 2 tomatoes
  • 1 onion
  • 1 clove of garlic
  • 1 tablespoon oil (sunflower or olive oil to taste)
  • 2 tablespoons of tomato paste
  • 100 g crème fraîche (also with herbs)
  • 100 ml of cream
  • About 30 g grated cheese (e.g. Emmental or Gouda)
  • Salt
  • pepper

the preparation

  1. oven on 180 °C (convection: 160 °C) preheat
  2. Wash the pumpkin and remove the lid. Scoop out the pumpkin with a spoon or ice cream scoop, leaving a 3cm rim. Cut the meat into small pieces and set aside.
  3. Cook the pumpkin in the oven with the lid on for 15 minutes.
  4. Wash the leeks and tomatoes, then cut the leeks into rings and slice the tomatoes. Peel and chop the onion and garlic.
  5. Fry the minced meat and garlic in sunflower oil. Then add the leek, tomato, onion and sliced ​​pumpkin and sauté briefly.
  6. Mix the tomato paste, fresh cream and cream.
  7. Season with salt and pepper.
  8. Remove the pumpkin from the oven, remove the lid and fill with the pumpkin-vegetable-minced meat mixture.
