Lamingtons are one of Australia’s most popular sweets. Here you can find out how you can easily cook the coconut dream Down Under yourself. We promise: After the first bite, you’ll have it all!

Ingredients for 16 servings:

  • 3 eggs

  • 110 grams of sugar

  • 130 grams of flour

  • 1 tablespoon of butter

  • 1 tablespoon cornstarch

  • 3 tablespoons of very hot water

  • 200 g grated coconut

Ingredients for the glaze:

Preparation:

  1. Preheat the oven to 180°C (top and bottom heat) and line a square cake tin with baking paper.

  2. Separate the eggs and beat the egg whites in a bowl until stiff. Gradually add the sugar and continue to stir until the sugar dissolves.

  3. Beat the yolks, mix and mix the flour and starch. Mix the butter with the hot water until the butter melts and then stir.

  4. Fill the dough in the prepared form and bake in the oven on the middle shelf for approximately 25 minutes. Then take it out and let it cool.

  5. To make the glaze: mix powdered sugar with cocoa. Mix hot water and butter together. Then stir.

  6. Cut the cooled cake into large cubes in the mold and dip the cubes into the glaze. Then add the coconut flakes and let it dry for an hour.
