Benderiki: Ukrainian pancakes with minced meat

We love pancakes, and not only sweet ones, but also savory ones. How nice that there are so many different variations. We feel like every country has its own version and it’s hard to decide which one we like best. But one thing is for sure: we think Benderiki is great!

Pancakes have very different names in Ukraine, and usually the name gives the balance. The so-called benderiki are usually filled with raw minced meat and then baked well so that the meat is only cooked inside the pancake. So to prepare it means: Bake for a long enough time so that everything is really cooked.

For Benderiki you have to prepare the pancakes yourself and also the mincemeat filling. But it’s very easy.

  1. In the first step, sift the flour into a bowl and then add the milk. Mix everything with a hand mixer so that there are no lumps.

  2. Now add the eggs, a little salt and a little mineral water and continue mixing until a uniform dough is formed. Cover and let rest for 30 minutes.

  3. Melt a little butter in a shallow pan. Add a teaspoon of egg and pour the pan so that the entire bottom of the pan is covered with a thin layer of egg. If the pancake moves with a light touch, it can flip. Bake for a minute, then leave on a plate. Repeat the process for the entire dough.

  4. For the filling, peel and chop the onion. Add the minced meat, mix everything and season with enough salt and pepper.

  5. Place the individual pancakes on a clean surface and, starting from the middle, place a triangle with 5 mm thick minced meat. It looks like a piece of cake. Fold the crepes around this piece of cake to create a filled crepe triangle. Repeat this process until you run out of pancakes and meat.

  6. Now beat the two eggs in a bowl until smooth. Insert the pancake triangles all over the batter.

  7. Heat the butter again in the pan and place the pancake triangles in a circle. Let everything cook on medium heat. Flip all the pancakes and bake for another five minutes.

  8. When the minced meat is cooked, it can be served. Simply serve with sour cream and let it taste good.
