Sicilian delicacy: baked Lombardy chicken au gratin with crisps and cheese.

What’s better than delicious baked chicken? Today we show you the Italian specialty: the Lombardian oven chicken.

Ingredients for 4 people:

  • 4 chicken breasts
  • 100 grams of flour
  • 50 g parmesan
  • 2 tablespoons of oregano
  • 3 tablespoons of olive oil
  • 500 grams of mushrooms
  • 1 onion
  • 1 clove of garlic
  • 2 tablespoons of butter
  • 50 ml Marsala
  • 50 ml of sherry
  • 200 grams of mozzarella
  • 1/2 bunch parsley
  • salt and pepper

Preparation time:

  • 20 minutes (plus 20 minutes baking time)

And it’s done like this:

  1. First, remove the chicken breast from the package and pat dry. Then mix the flour, parmesan, salt, pepper and oregano in a bowl. Then add the chicken breasts until everything is evenly coated.
  2. Wash and chop the mushrooms. Peel and chop the onion and garlic. Fry both in a pan with a little olive oil until fragrant. Then salt and pepper and place in a greased bowl.
  3. Fry the chicken in a little oil until golden brown on both sides. Then lay it on the mushroom bed.
  4. Preheat the oven to 190 degrees (convection). Then pour the marsala and sherry over the chicken. Cut the mozzarella as finely as possible and then cover the chicken with the mozzarella.
  5. Place the chicken in the oven and cook for 20-25 minutes. Meanwhile, wash the parsley, shake dry and chop very finely. To finish, sprinkle the baked chicken and enjoy.
