Want more vegetables on your plate? Then a succulent baked cauliflower is just right for you! This is how you cook steak from vegetables!
Again you bought too much cauliflower and don’t know what to do with it? At least it tends to feel that way to me, especially when I make cauliflower brownies. You don’t need much more than a handful.
And the rest? It leads a sad life in the fridge and is reluctantly served as a vegetable with main courses. White vegetables can be very tasty and have more than earned the rise of the main dish.
Today I want to show you how to cook cauliflower steak in the oven and make it especially delicious!
You will find out in this post
What ingredients do I need to make cauliflower steak?
There are many recipes. After a few tests, which were okay but not very flavorful, I came up with this recipe for Baked Cauliflower Steak. There’s nothing like cauliflower and garlic.
Now I’ll tell you which ingredients you need and how you can substitute them if you don’t have them on hand.
Is your cauliflower not so attractive anymore and the flowers are starting to turn yellow? Then it’s time to turn it into a steak. Just cut the not so nice pieces from the skin with a knife.
In order to prepare the cauliflower steak, it is important to still have the inner part with the stem. This is the only way to hold the flowers together. If you’re really hungry, you can of course turn all the cauliflower into steak. To do this, simply place the cut “leftovers” on the baking sheet.
However, the baking time is reduced here!
By the way, cauliflower is an excellent vegetable, with only 25 calories per 100 grams, suitable for light cooking. In the low-carb kitchen, it’s just as essential for anyone looking to lose weight.

By the way, for all those who are not big fans of cauliflower: Due to the spices used, you hardly notice any of its own flavor.
The combination of garlic and cauliflower is awesome. When roasted in the oven, the high temperatures turn the garlic black. You don’t have to worry about it, you can remove it before eating or just eat it.
If you don’t have fresh garlic on hand, you can use garlic powder. However, that doesn’t make it as delicious as fresh garlic cloves.
I crush the garlic using a garlic press to develop all its aroma. If you want, you can cut it into thin slices.
If you don’t have smoked paprika powder, you can of course use the classic one. Using smoked powder for this recipe is really worth it, it gives the steaks a delicious smokey aroma with a barbecue flavor.
By the way, paprika sauce goes very well with steaks.
If you don’t have paprika powder at home, use curry powder. You can leave the quantity the same.
These were the main ingredients of the recipe. You will also need chili powder, olive oil and lemon.

Baked cauliflower steak recipe
are you ready So let’s get started right away. You can find a longer version of the recipe here. This is especially for anyone who has never baked a veggie steak before. If you regularly start the oven to prepare vegetables, you will find a short version of the recipe with quantities for each part at the end of the article.
Here is a detailed step-by-step guide that can be used even by recipe beginners.
- 1 large cauliflower
- 1/2 lemon
- 5 tablespoons of olive oil
- 2 cloves of garlic
- 1/4 teaspoon chili powder
- 1 tablespoon (smoked) paprika powder
- salt and pepper
Also: baking tray or large saucepan, knife, board, brush.
1. Cut the cauliflower
Preheat the oven to 200º fan or 180º top and bottom heat.
Remove the leaves from the cauliflower and cut off the dry end of the stem. Now cut the vegetables in half in the middle of the stem. This way you can make two cauliflower steaks from it.
Cut off excess flowers outside. Now you should have two steaks of the same thickness in front of you.
Place them on a baking sheet lined with parchment paper. Now we take care of the marinade.
2. Prepare the marinade
Squeeze the lemon. Mix the juice with the olive oil.
Peel the garlic cloves and crush the garlic cloves. Add the garlic to the olive oil. Now add chili powder and smoked paprika powder. Mix the ingredients with a brush.
3. Bake the cauliflower steaks
Brush the marinade over the steak. Make sure they are covered on the sides as well and the cavities get a portion. If there is any leftover marinade, pour it over the steak.
Place the tray on the middle shelf and bake the steak. After 15 minutes of air circulation or 20 minutes of top and bottom heat, they are ready.
After this baking time, the cabbage is well done in the florets and slightly softer than al dente in the stem. This is how it should be if you want the most flavor and the perfect texture.
How can I refine the cauliflower steak?
Not very happy with the recipe and wondering what you can use as an alternative to seasoning the vegetable steak? I have a list of ingredients that are especially good for this:
- curry powder
- Sweet paprika powder
- Spicy paprika powder
- Smoked chile powder
- Fresh thyme or rosemary
- Kernels and nuts, such as sunflower, pumpkin, cashew
- Soy sauce
- Onion (to be fried in the oven)
Can I reheat cauliflower steaks in the oven?
Steaks taste best fresh out of the oven. Then because the cauliflower is still a bit firm to bite. If you reheat them, they will be much softer, especially with a high oven temperature.
It is better to leave it in the microwave. Due to their high water content, they heat up very quickly. You can store them in the fridge for up to 3 days after baking. Raw and seasoned, you have to prepare them within 12 hours and brush them with plenty of oil while you wait.
