In our busy everyday life there is almost no time (or desire) to spend hours in the kitchen preparing. For those nights when things need to go faster, the leek cake in the bowl is perfect. With a slightly spicy taste, it is an absolute classic for the autumn and pre-Christmas period. Perhaps the best thing about the savory dish is that you can change the filling and spices to your liking. It is traditionally prepared with leeks, bacon and cream and seasoned with nutmeg, cloves and bay leaves. But today there are many variations, with meat or vegetarian, so that everyone gets their money’s worth. You usually don’t need much time to prepare the filling. The dough is a bit more complicated. But you can save time with some tricks.
Quick yeast dough recipe
Leek pie with yeast dough is an absolute classic. But yeast dough has one big disadvantage: you have to let it rise. The following recipe can save you the wait. You need:
- 1/2 kg of flour
- 1 packet of dry yeast
- 180 ml skimmed milk
- 60 g butter, without salt
- 2 pinches of sugar
- spoonful of salt
Pour the milk into a small saucepan and heat. Then add the butter and let it melt over low heat. Then add the flour to a mixing bowl, make a well and add the yeast packet. Pour the warm buttermilk mixture into the well. Add salt, sugar and mix with a hand mixer to form a smooth batter. To do this, leave the mixer on low for 2-3 minutes and knead the dough well. Then continue to knead the dough well for several minutes on the highest setting. Then roll out the dough on a baking sheet lined with parchment paper. Make a 4 cm high border from the dough and then cover it as you like and decorate it with the sauce. Bake in a preheated oven at 200 °C for about 25 minutes.
Leek cake with puff pastry: ready to serve in 30 minutes
The first recipe will take less than half an hour. Since the baking time is twenty minutes, the leek cake with puff pastry is also a good choice for a hot meal at night, when you need something very quickly or when you want to save electricity and gas. At the same time, the leek pie is in no way inferior in taste to the classic one with yeast dough.
The preparation is very simple and ideal for beginners. There’s really nothing you can do wrong. You need 5 sheets of leaves, about 1/2 kg of leeks, and then you can change the topping as you like. If you want to save time, go with ham or bacon and pepper. Prepare fresh cream or sour cream (10%) creamy sauce. To taste, you can take pepper and nutmeg. You can also take ready-made hollandaise sauce and sprinkle the leek cake with grated cheese.
When preparing, proceed as follows: defrost the leaves and throw them away. Line a baking sheet with parchment paper. Pierce the dough several times with a toothpick. Wash the vegetables and cut or slice the stuffing. Put some olive oil in a pan and heat it. Then steam the vegetables and season with pepper and nutmeg. Stir in the hollandaise sauce, pour half a glass of water into the saucepan and boil briefly. Then reduce the heat and let the filling simmer for 5-10 minutes. Then spread the sauce over the puff pastry, sprinkle with grated cheese. Bake the leek cake at 200° Celsius in a preheated oven. After 20 minutes, remove from the oven and serve hot.
Quick leek pie with pizza dough
You can quickly bake a leek cake with a pizza dough baking mix. All you have to do is put the baking mix in a bowl and knead it with water with a hand mixer first on low and then on high until you get a smooth dough. Then roll out the dough on a work surface lined with baking paper. Then place the dough on a baking tray lined with parchment paper and decorate with the sauce and toppings.
Prepare the leek cake from the tray without the base
Alternatively, you can also prepare a leek cake without a base. Proceed as follows: First, prepare the topping. To do this, saute the mushrooms, bacon, leeks, peppers and vegetables in a pan and season with nutmeg and pepper. Then, break two medium-sized eggs into a bowl and add 50g of spelled wholemeal flour and a little baking powder. Mix the egg mixture well and add the crème fraîche.
